Steam, Don’t Boil

When it comes to cooking your vegetables, steaming is usually a better option than boiling. Why? The longer a vegetable boils, the more its nutrients leach into the water. Steaming, in contrast, allows you to preserve some of your vegetables’ water-soluble vitamins. If you do decide to boil your vegetables, consider getting back those leached nutrients by using the water in a soup, sauce, or stew.
