Mean Mug’s Savory Keto Egg Bites

- 1 cup
cooked bacon, chopped
- 10 Tbsp.
eggs
- 1 cup
heavy cream
- 1 tsp
dried oregano leaves
- ½ tsp.
pepper
- 1 cup
shredded mozzarella or cheddar cheese
- 4 cups
fresh spinach, chopped and sautéed
Directions
Preheat a conventional oven to 350°F or a gas convection oven to 275°F.
Add 0.5 ounces of bacon to each muffin cup or silicone muffin pan.
Whisk the eggs, heavy cream, oregano, and pepper until combined.
Fold in cheese and sautéed spinach to the egg mixture and stir until fully combined.
Pour the mixture evenly into the muffin cups (each will likely be around ¾ full).
Bake for 15–18 minutes, until the egg is puffed up like a muffin and slightly browned.
