Ingredients

  • 1 cup

    cooked bacon, chopped

  • 10 Tbsp.

    eggs

  • 1 cup

    heavy cream

  • 1 tsp

    dried oregano leaves

  • ½ tsp.

    pepper

  • 1 cup

    shredded mozzarella or cheddar cheese

  • 4 cups

    fresh spinach, chopped and sautéed

Directions

  • Preheat a conventional oven to 350°F or a gas convection oven to 275°F.

  • Add 0.5 ounces of bacon to each muffin cup or silicone muffin pan.

  • Whisk the eggs, heavy cream, oregano, and pepper until combined.

  • Fold in cheese and sautéed spinach to the egg mixture and stir until fully combined.

  • Pour the mixture evenly into the muffin cups (each will likely be around ¾ full).

  • Bake for 15–18 minutes, until the egg is puffed up like a muffin and slightly browned.
