No-Bake Strawberry Cheesecake Cups Recipe

Strawberries are the answer to all of your summertime sweet tooth cravings.

The naturally candy-like fruit is packed with vitamins, fiber, and antioxidants. While these berries make for an indulgent treat on their own, they can be incorporated into a variety of desserts that – when enjoyed in small portions – can be part of a healthy, balanced diet.

    Ingredients

    • Strawberry Filling
    • 2 cups

      strawberries, chopped

    • 1 Tbsp.

      Swerve confectioners sweetener

    • 1/2

      lemon, juiced

    • Cheesecake Filling
    • 8 oz.

      cream cheese, softened

    • 1/2 cup

      Swerve confectioners sweetener

    • 1/2

      lemon, juiced

    • 2 cups

      heavy cream, room temperature

    Directions

    • For the strawberry filling:
    • In a bowl, add strawberries, sweetener, and lemon juice.

    • Using a fork or a potato masher, mash the strawberries. The consistency should be a bit chunky. 

    • Adjust sweetness to your liking.

    • For the cheesecake filling:
    • In a bowl, combine cream cheese, sweetener, and lemon juice.

    • Add heavy cream and mix until stiff peaks. 

    • Use clear glass or plastic cups for presentation. Layer strawberry filling on the bottom, followed by a layer of cheesecake filling.

    • Continue to alternate layers as desired. Garnish with lemon zest and mint (optional). 

    • Refrigerate until time to serve.
